Crushed Potatoes with garlic, olive oil and Gruyère cheese
In this recipe, red wine vinegar is the secret ingredient, it brings an acidulous touch to the seasoning and balanced all flavors. Serve as an accompaniment with meat, fish or poultry.

|3 pounds small potatoes|
|100 g Gruyère cheese, grated|
|1/4 cup extra virgin olive oil|
|1/2 red pepper, sliced into cubes|
|2 garlic cloves, minced|
|4 chives, thinly sliced|
|4 green onions, thinly sliced|
|2 tbsp. red wine vinegar|
|Salt and pepper to taste|
Cook potatoes in salted boiling water until tender. Drain. Place on a serving plate and smash using palm of your hand or a pilar.
Add seasonning ingredients evenly.
Finish with cheese, serve as side dish and enjoy!
