Classic Straccatella

Stracciatella is a classic Italian soup made with eggs and fresh spinach, which owes its name to the filaments of eggs in the soup, "Straccio" meaning cloth. A recipe so delicious and easy, you'll want to make it every week.

Ingredients
2 cup of fresh spinach
3 to 4 eggs
1/4 cup of grated Parmesan
6 cup of homemade poultry broth
Salt and pepper to taste

Preparation

Heat up the chicken broth on medium heat.

Chop the spinach and add to broth. Bring to boil.

In a bowl, beat the eggs well., add Parmesan, salt and pepper to taste.

When the broth is boiling, add the eggs very slowly.

Mix and serve right away.

Substitute Replace the spinach by arugula or swisschard
