Asparagus in vinaigrette
Asparagus are an excellent source of vitamin B9, K and iron. If you have little time to prepare a healthy meal, this simple and tasty recipe is ready in a snap and will please all. Serve as accompaniment for a grilled fish, chicken or meat.
Asparagus in vinaigrette

| 2 bunches of asparagus |

| For vinaigrette |
| 15 ml of olive oil |
| 15 ml of white vinegar |
| Juice of 1/2 lemon |
| 1 teaspoon of Dijon mustard |
| Salt and pepper to taste |
Preparation
Clean asparagus and cut the edges.
Bring a big pan filled with water to boil. When water is boiling, add a good pinch of salt and asparagus and blanch for 3 minutes. Drain and place in a serving plate.
For the vinaigrette, in a small bowl, add all ingredients, salt and pepper to taste and emulsify with a whisk, until smooth texture.
Coat asparagus with vinaigrette and serve.

Add the zests of 1/2 lemon to your vinaigrette.
Substitute
Replace white vinegar by apple cider.
