Ingredients
2 pita bread or commercial pizza bread
1/2 cup of roasted cherry tomatoes (recipe on our site)
1/2 red onion
50 g shredded mozzarella
2 cup arugula salad
1/2 lemon
Extra virgin olive oil
Salt and pepper to taste

Preparation

Preheat oven at 500˚F.

Place pizza bread on an oven plate and drizzle with olive oil. Add mozzarella cheese,  roasted cherry tomatoes (view recipe), salt and pepper to taste. Cook in oven about 7 to 10 minutes.

Meanwhile, in a bowl combine arugula salad with a splash of olive oil, add the juice of 1/2 lemo,  salt and pepper to taste and mix well. Mince onion, add to salad and mix well.

Remove pizza out from oven, transfert on serving plates, add arugula salade on top, serve and enjoy!

Suggestion For those who love to experiment, you can topped your pizza with sautéed arugula, olives, artichokes, sun dried tomatoes, prosciutto or any other ingredient that comes to your mind, fantasy is all yours.
Idea You can use a variation of cheese.
Tip Always put the cheese before topping to prevent the dough to be too wet.
