This simple recipe is an excellent base in preparation for pasta, meat sauces, dressings or marinades. Excellent on grilled bread to make bruschetta or garlic bread au gratin. Use this base for soups or to make our homemade hummus. Ideas are unlimited with roasted garlic.

|2 garlic bulb|
|Extra virgin olive oil|
Preheat oven at 200˚F.
Cut garlic bulbs in 2 and place on aluminium paper, add 2 tablespoons of olive oil. Close the aluminium paper, dispose on a oven plate, place in the center of oven and cook about 40 minutes.
Remove from oven. Verify if garlic is soft and loose.
Take garlic out of skin with a fork and place on a small plate. Mash with a fork to make a puree. Transfer in a small bowl and add about 3 tablespoons of olive oil and emulsify well.
For garlic bread or bruschetta, spread on grilled bread. Add your choice of topping and serve.
