Julie inspires us with an Iceland Cod, crusted with crushed almonds (recovered from almond milk recipe), ginger and garlic, (our two accomplices ingredients in our antiviral mission), and lemon zests served with spaghetti in a lemon sauce or boiled potatoes with olive oil and fresh rosemary.

Ingredients
2 Iceland cod fillet (175 to 200 g each or according to your appetite)
½ cup fresh parsley leaves, minced
½ teaspoon fresh, grated ginger
½ cup crushed almonds
1 garlic clove, thinly sliced
2 tbsp. lemon zest
1 tsp. of olive oil
Salt and pepper to taste

Preparation

Preheat your oven to 400˚F.

Dry fish filets with absorbent paper (important).

In a bowl, combine crushed almonds, minced garlic, lemon zest, and grated ginger. Add minced parsley and olive oil and mix well.

Place a piece of parchment on an oven plate and place fish.

Spread the mixture evenly on fish filets.

Bake 10 to 15 minutes or until desired cooking.

Meanwhile, prepare a side dish of spaghetti with lemon sauce (view recipe) or potatoes with olive oil and fresh rosemary (view recipe). Serve and enjoy!

Idea Use sliced almond instead of crushed.
Substitute Replace lemon zest by orange zest.
Substitute Replace parsley by Basil.
